Why this wine?

-       With a balanced amount of acidity and sweetness, this wine pairs especially well with the sour flavour of black rice vinegar, which is softened by the fat of the pork belly. Sweeter Riesling is a good pendant for acidic and spicy flavours (Puckette and Hammack, 2015).
