Fusion Menu Concept

The F&B team created this concept on basing all menu dishes on combining elements of different culinary traditions that originate from different countries. This has been decided due to the fact that the team that has created this menu share different cultural backgrounds as well. The concept of fusion kitchen is based on the combination of ingredients and cooking methods from different parts of the world (Escoffier, 2019). By bringing together different cultures and kitchens new flavours and opportunities for  combinations arises (ibid).The most common fusion kitchen is Japanese and Peruvian, the so called Nikkei kitchen (Guide Michelin, 2020). This combination sets the start for the fusion kitchen menu by combining the Peruvian Ceviche with a Japanese Seaweed salad. The fusion for the main course is based on the French influence on the Moroccan kitchen. During colonial times Morocco developed from the typical African kitchen to a very own combination of French and African elements. The flavourful African kitchen and the sophisticated French cooking techniques add a unique experience to the menu (Nouri, 2020).  

The menu represents the team and will help guests understand the different culinary cultures. The menu offers dishes with typical ingredients from Peru, Turkey, The Netherlands, France and more. With polarization on the rise in the Netherlands, the menu will showcase what the benefits of having different cultures within a country can bring to a dinner table (Lipscomb, 2019). Intercultural exchange is supported by sharing a meal and combining experience and knowledge about food preparation (ibid). 

Each dish will be presented at the table with the story behind it and how it represents the kitchen and service team and their cultural and culinary influences. Each dish will contain a mix of different typical cultural ingredients which will require understanding and different cooking styles by the PE’s. The variation of techniques and the required knowledge about spices and flavours from all around the globe will be an addition to the PE’s learning.
